Eggless Rainbow Cake Recipe

The cake is inspired by the colors of the rainbow. This multi colour cake consisting of spongy layers. It is perfect for birthdays or any special occasion. You will definitely relish every slice. 


Ingredients:

Maida - 1cup (125 gms)
Mitha Soda - 1/2 tsp
Baking Powder - 1 tsp
Custard Powder - 1 tbsp


Other Ingredients: 

Condensed Milk - 1/2 tin (200gs)
Oil - 1/2 cup
Milk - 1/2 Cup
Vanilla essense - 1tsp

Procedure:

Step 1: Sift all top four dry ingredients (maida, mitha soda, baking powder, custard powder)



Step 2: Beat together milkmaid and sugar till light and fluffy.



Step 3: Gradually add oil and beat well.



Step 4: Add vanilla essence and then Add milk and maida alternatively in 3 portion.





Step 5: Beat Mixture till smooth and light.




Step 6: Divide Mixture in to 4 equal parts and add differnt color to each portion.









Step 7: Grease the cake mould (7 to 8 inches pan) and start pouring batter from each portion one by one - start from the center of the mould.




Step 8: Continue pouring from each portion one by one to give a design as shown below.








Step 9:  Bake at 160 degree temperature for 40 mins (or until a toothpick inserted near the center comes out clean)

Step 10: Remove the cake from the tin and allow to cool on a wire rack for 5-10 min. Slice and serve.
